Ingredients

Serves : 2
  • Ripe Tomatoes: 5 Medium to large


  • Onion: 1 Medium to Large (Sliced)


  • Butter: 2 Tablespoons


  • Whipping Cream: 2 Tablespoons


  • Sugar: 1 Teaspoon


  • Salt: 1/2 Teaspoon

Directions

  • Wash & chop the Tomatoes roughly.
  • Slice the Onion.
  • Heat the butter in a medium Sauce Pan.
  • Sauté onions until translucent.
  • Add the tomatoes followed by the sugar & salt.
  • Cook covered for 10 minutes on low heat.
  • Remove from heat.
  • Let it cool down.
  • Purée it in a Blender.
  • Strain & transfer back to the sauce Pan.
  • Add 2 Cups of water.
  • Let it boil over low to medium heat for 5 minutes.
  • Pour in two Soup Bowls.
  • Swirl 1 Tablespoon of Cream in each bowl.
  • Enjoy hot!
  • Note: You may add some Croutons if you like.
